The process is simple:
- Wash the potatoes & slice them to about 1/8" thick. I used a mandolin, but a sharp knife would also work. Just try to keep the thickness consistent. Whether or not you peel potatoes, is totally up to you... I didn't because there are a lot of vitamins in those skins.
- Place the slices in a bowl of water right away to prevent oxidation (potatoes will start to turn brown very quickly).
- Blanch the potatoes in small batches by bringing a large pot of water to boil. Add potato slices to the water & resume boiling (about 5 minutes). At the end of the 5 minutes, scoop them out with a big slotted spoon & drop them into cold water to stop the cooking process.
- Lay slices out on dehydrator trays so they are not overlapping.
- Place in dehydrator & dry at 135 degrees for 8 to 10 hours. After cooling, they are ready for storage.
