We use to make these all the time when I was growing up, They are the perfect treat during the summer, as there is no need to turn on the oven.

2 Cups sugar
1/3 Cup Cocoa powder
1/2 Cup milk
2 Tsp. vanilla extract
1 Stick butter
2 1/2 Cups regular oats
1 Cup of raisins (optional)
Combine the sugar, cocoa powder, milk & butter in a 3-qt. pot over medium heat & bring the mixture to a boil, stirring constantly until it reaches a temperature 235-240 degrees.
Remove the pot from the heat. Add the vanilla extract & give it a quick stir. Then add the oats & raisins, stirring to combine everything thoroughly.
Drop by the spoonful onto parchment paper lined baking sheets & allow to cool. Do this step quickly, as once the mixture starts to cool, it will harden. It is best to have two lined baking sheets & spoons ready to go before you start boiling the mixture. Enjoy!!!
