Jalapeno, Cheese & Corn Cornbread

2 Cups yellow cornmeal
1 Cup all-purpose flour
3 Tsp. baking powder
1/2 Tsp. baking soda
1 Tsp. salt (optional)
4 Tbs sugar
4 Fresh jalapenos (chopped)
1 Can of corn (drained)
1 Cup Mexican or Cheddar cheese (finely shredded)
1 1/4 Cups milk
2 Eggs
6 Tbs. melted butter

Grease and flour a 9-inch square baking pan. Preheat oven to 400 degrees.

In a mixing bowl, combine the cornmeal, flour, baking powder, soda, salt & sugar. Stir in chopped peppers, corn & cheese.

In another bowl, whisk together the buttermilk, eggs, and melted butter. Stir into the dry ingredients until well moistened. Spread the batter in the prepared baking pan. Bake for 25 to 30 minutes, or until lightly browned & firm. Enjoy!!!
