I few people have asked how I cook my rice, so I figured I'd post it here for those that wish to try it. It's drop dead simple to do & toasting the rice is the 'secret'... I use olive oil, but you can certainly use butter if you so desire.
Add 4 tablespoons of oil/butter in a 10" frying pan over medium-high heat until hot. Stir in 1 1/2 cups of long-grain rice & cook (stirring ever minute or so), until the rice is golden (about 5 minutes).
Immediately add 3 cups of broth (chicken, beef or pork to complement your meal) & then cover. Cook over low heat for 15 minutes, then remove from the heat & let stand 5 minutes.
Fluff with a fork after seasoning to taste (1/2 teaspoon salt & 1 teaspoon pepper) & serve immediately. Enjoy!!!
