The rain stopped yesterday, so today I'm smoking another couple of pork roasts & Mrs Ranch is making her 'Twice Baked Potatoes'. Probably have another side & of course some homemade bread. Making enough of everything so we can have leftovers tomorrow (I'm suppose to clean out the fireplace chimney in preparation for our winter fires).

And because Ernie is trying to lose weight, there is no dessert being planned, LOL!!!

Sorry Ernie, I couldn't resist teasing you, LOL!!! We both know the old saying, 'Everything in moderation'... It does work if we can resist the temptation to overindulge, having said that I too need to cut back soon...

I haven't cooked anything in over a week... I got up today @ 0400 hrs & figured today was a good day to do a small brisket, so I got it seasoned up, started a pot of pinto beans & got a loaf of bread going. Looks like I may be running down to the party barn with an umbrella since it started raining pretty good about daybreak...

This was my first weekend in town in a while. Ive been out hunting the past 4 weekends in a row, so the wife and I decided we wanted to just hang around the house and spend time with friends and family.... COOKING and drinking. We tried some new things and did an array of food.

Pics to follow....

Friday evening was pretty simple with some BBQ chicken on the gas grill. Enough to feed my small family and a few friends that came over.

Saturday, we got motivated to try something different. How about a bunch of different meats stuffed with a cajun type stuffing? I didnt really have a recipe for the stuffing so I just started adding anything that sounded good...haha.

Ended up something like this:

Boudin stuffing
Chopped onion
Cream cheese
Cheddar cheese
Apple
Crawfish tails

I got the gas grill and the smoker fired up and ready for a bunch of meat.

Started with a little appetizer of stuffed bacon wrapped japs right out of the garden.

We also stuffed a couple of bacon wrapped chicken breast for a few ladies who don't like red meat.

And also a rack of ribs for my 3 year old daughter. She LOVES ribs, and can darn near eat a half rack by herself.

Also needed to cook some venison that I shot over the past few weeks. We always just simply grill backstraps 'till about medium done, or chicken fry it. We wanted to try something different, so why not stuff it too? Cooked at about 350 for about 15 minutes till medium done. Turned out GREAT and was my favorite of all the things we cooked this weekend.

And last but not least, a smoked pork tenderloin.... also stuffed with the cajun stuffing and wrapped in bacon. Baked potatoes and a big homemade salad by my wife were the sides.

Wheew.... Im still full, and slightly groggy from all the beer. :)

Believe it or not, there wasnt much leftovers. I took a sample of the smoked pork tender and grilled backstrap to my grandparents down the road, and I ate the rest of what was left for lunch today. It's all gone now. Hopefully will get to do this again soon.

Smoking some drumsticks right now (coated them like hot wings), a couple of small baked potatoes, the last of the pinto beans (with the last of the brisket thrown in) & homemade bread. I'm trying to do enough as the rain chances are pretty high the next couple of days (70% tomorrow & 80% Thursday).

Thanks! I made a pot of lima beans yesterday & grilled a couple of steaks. Sorry, no pictures... This time change me anal-retentive... LOL!

Trying to make pretzel bread today (first time) since it's drizzling. We wanted to try homemade pretzel rolls for burgers as something different.

Pretzel buns sound great for a burger!

I did some steaks as well last night. Ribeyes were on sale at HEB, so my wife picked up a couple. They were about $5 each and were over an inch thick. Light salt and fairly heavy pepper, a small square of butter and on the grill for roughly 16 minutes.... yummy. Cooked med - med rare ish. My wife made a broccoli salad of sorts with broc, mayo, bacon bits, cheddar cheese and chopped red onion for a side.
