Bought some rigs tonight, gonna give ranch's method a try in the next few days.
I drove clear across Texas twice, so cannot dispute part of what you say, but not sure about the mosquitoes. I think Wyoming and Alaska can give you some competition there.

Had some family over and tried smoking a pork butt for the first time this past weekend. Fired up the smoker early Sat morning. Got the temp settled at 225 and threw on the pork butt, 2 links of sausage and a small pork tenderloin. Sausage and tenderloin didnt take long so we snacked on that while having drinks and waiting on the butt.
Roughly 6 hours uncovered and then 2 more hours tightly wrapped in foil, then let it sit for an hour and it turned out amazing!! Everyone devoured the pulled pork samiches on toasted buns. I'll definitely be doing this again.
Also included a pic of a drink that promptly got named the "Redneck Bloody".... lol. We were making bloody mary's and the sausage was sitting there, so it seemed like a good idea. Lol.

Did you use a vinegar finishing sauce on the pulled pork???
Whatever. I'm just glad we were there to take advantage of it...
I got them on the kettle now... Mrs Ranch just came down to let me know that we got a phone call to inform us that a very near friend just passed away.
I had coffee with Phil everyday for over 10 yrs. I'll be gone till Thursday, I'm going to go & say good bye...
